Lacto+: A Sustainable Approach to Whey Valorization
Lacto+ is an innovative project aimed at sustainably transforming whey, a by-product of cheese production, into a high-value, protein-rich powder to be diluted. This approach maximizes the potential of an underutilized ingredient, offering nutritional solutions tailored to athletes and other dietary needs.
A Scientific Collaboration for Optimal Formulation
This project relies on interdisciplinary expertise in nutrition, biotechnology, chemistry, and sports physiology to optimize nutrient absorption and efficiency in a sports context. Thanks to specific chemical interactions between tea polyphenols and whey proteins, Lacto+ enhances the stability and bioavailability of antioxidants. This process helps protect against oxidative stress and optimizes muscle recovery after intense physical effort.
Sustainable Whey Valorization
In the canton of Fribourg, whey valorization is experiencing significant growth. Developed by Translait and Infré in partnership with several research institutes, the Lacto+ project aligns with this trend by creating an innovative nutritional powder. Supported by Fribourg Agri&Food with an annual investment of 1.15 million Swiss francs, it highlights the canton’s commitment to agri-food innovation.
A Circular Economy Serving the Environment
Traditionally used as animal feed, whey is now a key resource for new applications such as bioplastics, desserts, and hydrogen production. Translait is already valorizing part of it into dietary supplements and calf feed. By integrating Lacto+ into a circular economy approach, this project helps reduce waste and environmental impact while generating economic opportunities for the canton of Fribourg.

“It is essential to base agri-food innovations on solid scientific foundations, with a focus on sustainability and circular economy,” emphasizes Serge Rezzi, director of the Swiss Foundation for Nutrition and Health, designer of the Lacto+ project, and its project manager.
